Stuffed Squash
Ingredients
4 medium yellow squash (~8 oz size)
¼ cup dry breadcrumbs
2 Tbsp parmesan cheese
Paprika, for garnish
Spinach Stuffing
1 lb fresh spinach, chopped and cooked
1 small onion, diced
1 Tbsp vinegar
1 (3 oz) package cream cheese
1 tsp salt
¼ tsp pepper
¼ tsp nutmeg
Cook spinach, adding onion and vinegar, drain well. Place all ingredients in blender or food processor, process until well blended.
Instructions
- Preheat oven to 350°.
- Rinse squash and place whole squash in saucepan with water to cover. Boil until tender.
- Rinse in cold water until cool enough to handle.
- Split each squash lengthwise. Scoop out and discard seeds and pulp. Place cut-side up in shallow baking dish.
- Fill each squash cavity with Spinach Stuffing and top with breadcrumbs and parmesan cheese.
- Bake at 350° just until hot throughout, 15-20 mins.
