Stuffed Squash

Ingredients

4 medium yellow squash (~8 oz size)

¼ cup dry breadcrumbs

2 Tbsp parmesan cheese

Paprika, for garnish

Spinach Stuffing

1 lb fresh spinach, chopped and cooked

1 small onion, diced

1 Tbsp vinegar

1 (3 oz) package cream cheese

1 tsp salt

¼ tsp pepper

¼ tsp nutmeg

Cook spinach, adding onion and vinegar, drain well. Place all ingredients in blender or food processor, process until well blended.

Instructions

  1. Preheat oven to 350°.
  2. Rinse squash and place whole squash in saucepan with water to cover. Boil until tender.
  3. Rinse in cold water until cool enough to handle.
  4. Split each squash lengthwise. Scoop out and discard seeds and pulp. Place cut-side up in shallow baking dish.
  5. Fill each squash cavity with Spinach Stuffing and top with breadcrumbs and parmesan cheese.
  6. Bake at 350° just until hot throughout, 15-20 mins.
