Collard Greens with Italian Sausage
Ingredients
1-2 tbs olive oil or coconut oil
½ large onion, diced
3-4 cloves garlic, minced
½ lb Italian Sausage, casing removed
1 lb collard greens (2-3 bunches), rinsed, center stem removed with leaves cut into 2-3 inch pieces
1 ½ cups vegetable or chicken broth
1 tbs reduced sodium soy sauce
2 tsp apple cider vinegar (or the juice of 1 lemon)
2 carrots (or daikon radishes), sliced
½ tsp ground black pepper
Red pepper flakes to taste
Instructions
- In a large skillet, saute onion in the olive oil for 3-4 mins.
- Add the garlic and saute for another minute.
- Add the Italian Sausage and saute until no longer pink.
- Add the collards sautéing until wilted.
- Add the remaining ingredients. Cover, reduce heat, and cook for 20-30 minutes stirring occasionally.
