Collard Greens with Italian Sausage

Ingredients

1-2 tbs olive oil or coconut oil

½ large onion, diced

3-4 cloves garlic, minced

½ lb Italian Sausage, casing removed

1 lb collard greens (2-3 bunches), rinsed, center stem removed with leaves cut into 2-3 inch pieces

1 ½ cups vegetable or chicken broth

1 tbs reduced sodium soy sauce

2 tsp apple cider vinegar (or the juice of 1 lemon)

2 carrots (or daikon radishes), sliced

½ tsp ground black pepper

Red pepper flakes to taste

Instructions

  1. In a large skillet, saute onion in the olive oil for 3-4 mins.
  2. Add the garlic and saute for another minute.
  3. Add the Italian Sausage and saute until no longer pink.
  4. Add the collards sautéing until wilted.
  5. Add the remaining ingredients. Cover, reduce heat, and cook for 20-30 minutes stirring occasionally.
